Breakfast: Cinnamon and Raisin Bagel and 1 cup of black coffee
Lunch: Leftover Lentil Loaf with a bit of the flax/balsamic vinegar and a little bit of vegan mayo on french bread. 2 medium glasses of water. A few crisps Little One gave me and 3/4 of an apple.
Dinner: Tortilla Pie, 3 medium glasses of water, 2 Coconut Chocolate Cookies.
The Tortilla Pie is from A Vegan Taste of Mexico and the cookies are from La Dolce Vegan. The cookies are fab, the recipe makes 24 of them so they’re not very big cookies but they’re very tasty. I’m so happy we’ve found some vegan chocolate chips and chunks finally!
I’m sure I will have a cookie or 2 later (hell, it’s the weekend!) and a cup of tea.
