Breakfast – Apple and Cinnamon Granola, 2 cups of black coffee. This recipe is from La Dolce Vegan and it’s wonderful! I used a bit more apple than it called for as there was no point in just have a couple of bits leftover I didn’t think. It’s a bit pricey with the 1 cup of pecans but I really enjoyed it and am looking forward to eating more of it!
Lunch – 1 leftover Burrito from last night and 1 packet of vegetable flavour 3 minute noodles. Large glass of water. Odd combination I know, I was going to have salad but it’s cold and wet today so I had the noodles instead.
Dinner – Spaghetti with home made sauce with veggie mince in it and vegan mozzarella on top. Garlic toast. Large glass of water.
Etc – 2 cups of herbal tea.
