Breakfast – Oatmeal with maple syrup, 1 cup of black coffee.
Lunch – same pasta and bean salad, this was the last of both the pasta and the beans so onto something new tomorrow! Large glass of water.
Snack – 2 cups of herbal tea and 4 garlic rice crackers.
Dinner – Hawaiian chicken (seitan, peppers, pineapple, onion in a thickened stock sauce, no oil besides what was in the canned seitan), brown basmati rice with wild rice. Large glass of water and the unsweetened pineapple juice from the can.
Evening – cup of herbal tea, big fruit smoothie with leftover pineapple, tinned peach, frozen banana and half an apple that Little One didn’t finish, will add some low fat soya milk if it needs it.
Feeling pretty good so far, I need more breakfast options as I find that the hardest meal to deal with. I will make some muffins but I don’t want to rely on having those every day and get into a rut with them. I have leftover rice for tomorrow so I will try one of the rice breakfasts that I have and see what that’s like.
