I wasn’t sure about this recipe, it sounded odd but intriguing so I gave it a go and we all really enjoyed it, even DH who isn’t a fan of soup besides tomato and sweetcorn chowder so that was a big score!
It’s a nice subtle curry flavour and the vegan cheese actually does make it taste nice and cheesy. It was more interesting than the Cream of Cauliflower soup I made from the same book probably because it had more vegetables in it to give it a better flavour. It has milk (I used soya but the recipe said rice milk) and fake cream in it as well to add to the creaminess of it.
We had it with wholemeal rolls and everyone ate what they had served so that was a good meal for us, we often get a lot of leftovers with fussy DH and Little One who changes his mind what he does and doesn’t like daily!
This recipe made enough for 2 meals for us, I just have to figure out what to put it in to go in the freezer…
Oh, and in case you’re wondering about the name of the cookbook, it is called Vegetarian Soups as the original version was vegetarian, so if you buy an older version of the book it will contain dairy products. However, Nava Atlas is now vegan and re-worked the book to be vegan so the newer versions, although going by the same name, aren’t vegetarian. Can’t wait for winter to try more recipes from this book, I do love a nice soup!
