Quick Farmer’s Paella


This was an easy dish to make, all one pan which is nice, but even though it is called ‘quick’ and is for a risotto/paella it still takes about 45 minutes to make.

It has carrots, peas, red pepper and tomato in it. It’s supposed to have artichoke hearts but we can only buy them in tins in brine and they are horrible so I didn’t bother. It’s also supposed to have baby lima beans in it, and lima beans are another thing that are very hard to find over here, so I stuck in some butter beans and they worked just fine.

It has toasted pine nuts on top of it (recipe calls for them or almonds) and I served Little One’s with a tiny bit of vegan parmesan on top of it. It was a really nice meal and I’ll definitely be making it again. I had the leftovers for lunch the next day (it makes 4 servings, the way I serve anyway!) cold and it was nice that way too.
