Buttermilk Biscuits

This is my favourite biscuit recipe, finally found after making many biscuits that were like rocks and didn’t rise at all. I like it so much because the texture is just right, the taste is lovely and it’s very very easy and quick to make. I don’t even bother to mix the vinegar with the soya milk beforehand to let it curdle and they come out fine.

The recipe says that you need to eat them the same day as they don’t last, but I find if you keep them in an airtight container that they’re fine the next day if you don’t mind them a little soft, beyond one day I’d not advise, but they’re fine for lunch with the leftover soup the next day.
