Maple Balsamic Vinaigrette

This is a lovely salad dressing. I omit the red wine it calls for as we don’t drink so we only have a few red wine ice cubes for cooking, and I’m not really that much of a fan of red wine anyway!

Today I’m using this for some pasta salad using leftover spaghetti from last night, I’ll be throwing in spring onions, cherry tomatoes, cucumber and pepper of some colour, whatever is in the fridge really.

I only make half the recipe as well, it lasts about 3-4 days for one person so it’s plenty.

I should make more salad dressings really, I tend to rely too much on vegan mayonnaise and shop bought dressings. I do find though that recipes can be a bit hit or miss, I need to find one that has some roasted sesame oil in it, I love the taste of that!
