Golden Lentil Soup and Easy Biscuits


We went out for the day yesterday to see a big old house and estate with friends so by the time we got home it was already dinnertime and we were all very tired.

So, I pulled out the quick lentil soup recipe which is a standard Rose Elliot one, I swear it’s in at least 3 of the cookbooks I’ve got by her, this one was in her book Cheap and Easy. It takes half an hour tops to make (it could be done faster in a pressure cooker but I was too tired to figure mine out last night). The ingredients are incredibly simple as well, but when it’s all put together it just has a really lovely taste.

While the soup was boiling I made Easy Biscuits from How It All Vegan, they are indeed very easy and cook in 12-18 minutes so they were ready at the same time as the soup. This is the second biscuit recipe that I use along with the other one I posted, biscuits are just so fast and easy when you need something to go along with a soup or other dish but don’t have time to make a loaf of bread.

I made a double recipe of the soup so I can have some for lunch today with the leftover biscuits and put the rest in the freezer to extend our no shopping period.

I got a new cookbook from the secondhand book place at the estate we were at yesterday for the amazing price of 70p (about $1.25), it’s a Linda McCartney one of world recipes and there are some very nice looking things in it, about 2/3 of the recipes are vegan as well which is great. There are 2 recipes that have been added to this month’s no shopping required menu which is a great bonus!
