Mung Bean and Courgette Casserole


I love this dish but DH and Little One aren’t such big fans so I don’t get to make it as often as I’d like. It’s pretty simple to do, boil your mung beans, fry your courgettes with the spices in olive oil (quite a bit of oil but it doesn’t taste oily when done) and then put it all in the oven for about 20 minutes.

It also tastes lovely cold the next day in wholemeal pita bread which is what I did with the leftovers.

Although it doesn’t look all that attractive it’s taste makes up for it!
