Chickpea Ratatouille

I’ve made this dish a load of times in the past, it’s incredibly easy, just put everything in a dish and bake for just over an hour, plus it is yet another store cupboard recipe (plus one pepper, but we always have peppers in the fridge).

Little One loves chickpeas so this goes down really well with him, DH is less keen on this recipe but he liked this one, which was odd as it was slightly undercooked this time which meant the onions were a little crunchy and he’s not an onion fan.

The herbs and spices of this dish really make it what it is, the first time I made it I was a bit skeptical and worried about what it might taste like, but after the first time I was sold and will be making this for many years to come!
