I had a load of bananas that either needed using or throwing out so I decided to do some baking last night while talking DH through cooking dinner for us (the vegetables with coconut and ginger that I blogged about before, yummy again). I basically decided to just trawl this trio of books and find stuff that used bananas that sounded interesting.
These bars have walnuts in them which gives them a nice crunch and cinnamon sugar on top which also adds a bit of crunch to them. I used 2 bananas instead of 1 as mine were a bit small, however the bars are a little bit too moist so I think I should have used one and a half, you live and learn.
I will definitely make these again, I think they would be good in Little One’s school lunch if they weren’t so sticky with the extra banana.
