Black Bean Empanadas

This cookbook is a vegetarian one just for the record, it’s not hard to veganise most Mexican food though, although I wasn’t as excited about this book as I’d hoped to be once I got it.

These are pizza dough (from Vegan with a Vengeance) with black beans, onion and spices inside. They were a little plain I thought, they seem to just be a vehicle for eating lots of salsa and guacamole which were very nice with them, but on their own they’d be quite dull I think. There are a few leftover so we will see if they last well enough for Little One to take for school lunches in the future with more interesting things added to them, although he would take salsa too as he loves it!
