This is a really nice creamy mild soup with curry flavour. Little One and I both really like it, we had it with pita bread as I couldn’t be bothered to make chapatis and wanted a quick meal. This soup can be made from start to finish in half an hour and the only non store cupboard item is a yam (I used sweet potato but there is always some confusion over which country calls which vegetable a yam!) but if you always have those in the house you’re in luck!
I guess I’m also assuming that everyone has coconut milk in their larder, I had two tins for some unknown reason and this soup was added to the menu as part of my larder clean out attempt! Besides the yam and coconut milk it’s just onion, garlic, celery, potato, red lentils, stock, curry paste and seasoning, very simple but very tasty.
We don’t have this every month but it does go on the menu every few months, there are enough leftovers for another meal as well which is always nice.
