Spicy Peanut Dip

I have been a bit under the weather the last few days and have had Little One home from school with a cold as well as a baby getting his first tooth so I wanted something healthy for lunch today like crudites but also wanted something tasty to dip them in. After looking through a few books I decided on this dip as it didn’t require anything to be cooked or beans to be defrosted to make it (I never seem to think ‘oh I fancy some kind of dip’ before it’s time to eat and I keep my cooked pulses in the freezer).

The main ingredient of the dip is silken tofu but it doesn’t taste of tofu at all. I added an extra tablespoon of peanut butter (organic with no added sugar) as I didn’t think it was peanutty enough. I actually added the full amount of cayenne pepper as well which is amazing for me, but it has a nice heat without burning your tongue.

I really enjoyed the dip a lot and am looking forward to dipping more things in it tomorrow as there is tons left. Besides the peanut butter it’s not actually go anything too fattening in it either which is great. The crackers are organic wholegrain ones from Tescos and they are lovely, I’ll be buying more of those for sure!
