I am really a bit confused about the differences in biscuits/cookies between England and America. This is the third or fourth cookie recipe that I’ve made that is more like mini cakes than what I would consider cookies to be. To me cookies are quite hard and crunchy, these are quite soft and chewy.
I tried cooking them longer to see if that would help but they are still just like cake on the inside, very nice cake, but cake all the same rather than cookies like I expected.
Anyway, they taste nice and seem quite seasonal at the moment so that’s ok.
