Creamy Curried Veggies


This is another recipe from this book that has been made a lot in this house. It’s got a lovely curry taste without being too sweet from the coconut milk. I use a whole tin of coconut milk plus a tin of water to cover the vegetables, just the coconut milk called for in the recipe would never be enough when I make it.

We have this with rice of some sort and poppadoms.
