This sounded like a really nice dish and I had high hopes for it whilst making it but it just didn’t come out very well, the sauce was all wrong, too sweet with the rest of the flavours not combining very well.
There could be a couple of things that caused it to be such an odd dish. To start off with the tin of coconut milk I used was the sweetest I’ve ever tasted, I actually went outside to get the tin out of the recycling to make sure it wasn’t sweetened. I also used regular curry paste rather than red curry paste so maybe the red would have given the dish a better balance. I also didn’t add pimientos as you can’t get them over here from what I’ve seen.
I don’t think I’ll be trying this one again as I don’t see any way to make it work.
