Leek and Bean Cassoulet with Biscuits


This came out really well and Little One and I both enjoyed it. It wasn’t quite as rich as I usually make my stews but it had a nice flavour, was hearty and easy to make.

The recipe says that it will take an hour and 20 minutes start to finish, not sure whether I was cooking at full speed or what but it only took an hour for me to complete this meal, so we actually ate early for once!

My biscuits were made with half a cup of wholewheat flour and a cup of barley flour as I ran out of plain flour (I was shocked, I never run out of flour!). They were a bit heavier than I imagine white biscuits would have been by this recipe but they were still tasty.

This one will be made again. It was fun to take the cast iron frying pan off the top of the cooker and put it in the oven for the first time too, I knew you could do it but I’d never had a reason to do it before making this!
