Cannellini Bean Yam Hummus

This is my younger sisters favourite hummus so I thought I would give it a go to see what she’s been raving about. I thought it was nice, had an interesting flavour and the pine nuts were a nice addition, but I don’t think it’s the best hummus I’ve ever had (that honour would go to caramelised onion hummus from one of the UK supermarkets, I could eat tub after tub of that stuff, gorgeous).

With my lovely new food processor this was really easy to make and besides having to bake the sweet potato I had everything to hand so it was quick. I may try it again with a bit more lime juice and more garlic and see if that livens it up a bit.
