Sweet and Spicy Lentil Chili


This was the first thing I have made from this Christmas present cookbook and it was really lovely. The chili had just the right amount of spice and sweetness is added by the apple juice that goes into it. The lentils held their shape having been cooked gently rather than boiled to death as well.

The recipe made enough for 2 meals and one lunch for Little One and I (so enough for a family of 4 I’d think) and the apple juice was the only thing that I had to buy specially for it, everything else was from my larder or fridge (it has a red pepper in it but I tend to have those in the fridge anyway).

I will definitely be making this again and I’m looking forward to trying more recipes from the book. Sorry for the dark photo, the one taken with the flash was scary!
