This is the first thing I’ve made from the 2 Moosewood books that I have. The books aren’t vegan and aren’t actually vegetarian as there are many fish recipes in them, but there are a good proportion in this book that can easily be veganised and this was one of them.
You basically make a vegetable stew with a thick gravy that has sweet potatoes, regular potatoes, onion, mushrooms, parsnips, peas, corn etc in it and then make biscuits to go on top and bake it unti the biscuits are done. These biscuits were the fluffiest I’ve ever made and were really tasty, I don’t know if that’s because they were sort of steamed from the stew as well as being baked as the ingredients aren’t any different from any other biscuits that I’ve made.
Little One really enjoyed this as did I and it reheated well for lunch the next day. The recipe makes a huge amount, what you see in the photo is actually only half what the recipe calls for, I wouldn’t have a pan large enough to make the full amount and this easily serves 4 people so there is no real need to make any more. The recipe says the full amount would serve 6 but they would have to be 6 damn hungry people!
