Quinoa Chickpea Confetti Casserole

I had read about this dish on several blogs so I was excited to try it, especially as I’ve never cooked with fennel before and managed to find some in the supermarket. I have to say I was really disappointed with this dish though, it was pretty bland despite all the herbs in it, I think it needed something strong in it like lime or lemon juice or perhaps balsamic vinegar to give it a kick.

I didn’t even save any of this for lunch the next day which is really unusual for me, but I just couldn’t force myself to eat it again so it’s not one that will be repeated.
