This was a really simple dish to make and was pretty tasty. It has spaghetti, cherry tomatoes, olives, sundried tomatoes, tinned tomatoes and red pepper in it. There was supposed to be wine but I didn’t have any so none went in.
You fry everything and then add the cooked spaghetti and cook it in the over covered and then remove the cover so it can crisp up a bit. I was late getting dinner on the table which can be a cardinal sin when you have a 4 year old so mine wasn’t as crispy as it probably should have been or as I’ll let it get next time I make it.
It made plenty for 4 people and I’m sure it will reheat well for lunch (finished off the salad today) too.
