I was happy to find this recipe as beans and potatoes were abundant in the kitchen! I used both french beans (purple ones grown by my Mum which turn green when you cook them) and runner beans from the organic box and it was really tasty.
It’s a very simple dish to make, just fry the onion with the spices, add the potatoes and beans and cook gently with the lid on until the potatoes are soft. The steam from the vegetables does all the work so you don’t have to add any liquid to it. It’s not a very hot dish as there is only 1/4 tsp of chili powder in it but the spices in it have real depth of flavour.
Jim did his normal ‘I’m not eating this, I don’t like curry’ and the proceeded to clear his plate! Piggle had some leftovers the next day for lunch and it was just as nice then. Definitely a keeper for when we’re snowed under with potatoes and beans again!
