Jen’s Ginger Butternut Lentil Soup

This was a really simple, filling and tasty soup that hardly took any time to cook which is always a bonus when you have a sick child in the house and are tired from having been up all night with him but want something warming and comforting for your dinner!

It’s a simple mix of onions, butternut squash, ginger, stock, tinned tomatoes, lentils and seasonings. I could have done with adding a little bit more salt to mine but that’s my fault not the recipes!

Piggle just had some toast with his as I was too worn out to make any bread with his and Jim just had toast as he was still getting over a stomach bug.

I’ll use this recipe again I’m sure.
