Tofu and Kale Spanakopita

This sounded like a nice way to use up the bag of kale that I had and we all enjoy pastry and tofu so I gave it a go. Unfortunately it wasn’t all that tasty and lacked flavour.

Besides the tofu and kale it has garlic, lemon juice, an onion, salt, pepper and nutmeg, so not very many ingredients really.

It was pretty easy to put together despite having to brush each layer of phyllo with olive oil as you went along. However, I doubt I’ll ever make it again as none of us finished off our portions and we all thought it was uninspiring which is sad.
