Jim turned 7 a few days ago and once again requested chocolate cake with vanilla icing.
The cake was a new recipe, it’s the Chocolate Cake from The Joy of Vegan Baking and it was wonderful. Really moist and not too heavy as some vegan cakes can be. It also didn’t crumble and send off crumbs into the icing which can be so frustrating. I doubled the recipe and cooked it for about 50 minutes.
The icing is Vanilla Buttercream from Vegan Cupcakes Take Over The World which is my go to frosting nowadays as it always works out. I use Trex for my UK readers and it works just fine. I put rice milk in it this time rather than soya milk and that didn’t make a difference either. I probably should have halved the recipe as the frosting was really thick on the cake, but if you can’t have a frosting blowout when you’re 7 when can you?!?
We all really enjoyed the cake, even Piggle who normally just eats the frosting! Jim also requested Slurpy Spaghetti again and had 2 servings of it and we had out first ice cream of the year. Being a mean Mother I refuse to buy ice cream when it’s cold outside so Jim’s Birthday marks the start of ice cream season in our house!
