Linguine with Lentils and Roasted Butternut Squash

I really like lentils with pasta, it’s just so filling and rustic.  This is another winner from Vegan on the Cheap and very easy as well.

I roasted the butternut squash on baking paper without an oil and it came out really well, I also steam fried the onion.  Besides the squash there are brown lentils, onion, garlic, herbs, stock and tomatoes.

Obviously I didn’t use linguine, that’s wholemeal spaghetti instead.  The boys really enjoyed this meal as well so I’m sure we’ll be cooking it again in the future!
