Tried and True

Neither of the recipes from this meal are new ones to us, in fact they’re old standbys that get used over and over again.

The seitan is from Fat Free Vegan and cooked using the Oven Fried Chick’n Seitan recipe from Quick and Easy Vegan Comfort Food.  We all love it done this way and I pretty much just use the recipe for guidance now and change the herbs and spices depending on what I’m feeling like eating.  It is always nice and crunchy though and with no fat used it’s not greasy at all.

The potatoes are Slow Cooked Scalloped Potatoes from You Won’t Believe It’s Vegan.  They take about an hour and a half in the oven so it’s a dish that can be started early and then just left alone.  It makes a ton but I love them reheated for lunches for a few days afterwards so I don’t worry about it and make the whole recipe.  They’re brown due to the soy sauce that goes in the sauce.  The recipe says to sprinkle nutritional yeast over the top but I found that it just went a bit burnt so I now throw it into the sauce and it’s much nicer that way.

Served with some frozen peas which both the boys love and it’s a winner every time!
